Breakfast at Brooke's: Blueberry Crumb Bars

hi. i aint gonna go on a whole thing about how i havent posted and whatnot. But, I do want to let you know that there will be a few changes going on. Starting with me, I will no longer be posting on wednesdays, only occasionally when i have time. Fridays are my day, so hopefully i can get posts up every friday, i already do have the next two weeks planned on what i am gonna do, so expect to see a few new posts from me in the next coming weeks.

Anyways, back to the topic. Breakfast at Brooke's. Have not done one for a while. Excited to do it. I have been seeing this recipe all over my feed and it has constantly being pinned and repinned, so i decided to test it out for you guys/girls. This recipe is by Averie Cooks and it is pretty darn good. I did not take step by step (im really sorry) photos, but i did take an after, which looks fantabulous. I halved the recipe, so you can, or can do the whole thing if you are that confident that you are gonna love it, which i am. lets just post the recipe. im done blabbing. i think.

Crust and Crumble Topping 1/2 cup (1 stick) unsalted butter, melted 1 cup all-purpose flour 3/4 cup old-fashioned whole-rolled oats (don't use quick cook or instant, they're finer and behave like flour and will make mixture too dry) 1/2 cup granulated sugar 1/4 cup light brown sugar, packed pinch salt, optional and to taste

Blueberry Layer 12 ounces (2 cups) blueberries 1/3 cup granulated sugar 2 tablespoons lemon juice 2 teaspoons cornstarch

ONE BOWL. You read it, lemme repeat that. ONE BOWL. ONE. ONE stinkin bowl. ONE. This makes me so happy!!!!!! I only used a spatula, two measuring spoons/cups and a medium glass bowl. Thats it. like stop it. this never happens. Lets just tell you the directions and get to the pictures (which yes, are covered in powdered sugar, just for the picture. not necessary, but why not?) Just combine everything for the crumble and split in two parts. Thats all, just put half of it in the bottom of the pan and press it down, put the rest on the side. The bowl will be empty, and then put in the blueberries, sugar, lemon juice, and cornstarch. Toss it and then layer it on top of the crumble crust. crumble the rest of the topping on top and stick into a 350 degree oven for 40ish minutes, i halved it, so about 45 minutes. I would recommend 55 minutes for a regular sized, once it smells buttery and the blueberries are bubbling and the crumble is golden brown. thats it. enjoy these pictures. or one. enjoy!
