Brooke & Brownies

hi. its me. and yes, i know. i didn't post on wednesday and i hope you people understand. once i finish, you will. as you may or may not know, im kinda the nerd out of all three of us and i got a lot of work to do. i have been extremely busy with schoolwork and homework and studying for tests and writing essays. not to even mention that me and three of my friends are planning a carnival and *attempting* to raise over $1,000 in less than 2 weeks... now, i could go into depth and tell you every detail of this past week, but i prefer not to. so, it is thursday night as i am writing this, but i will not be giving you a breakfast at brookes. you will get something different, but equally as great. also, for right now, i don't have the pictures, but i will eventually. (btw, this is making up for wednesday's post) okay, im done blabbing and hopefully you get me now. WE ARE MAKING BROWNIES. not any brownies. but the richest, most chocolatey, fudgy brownies you have ever had. well, unless you've had le pain quotidien. then, they kinda beat this with their signature thick, crisp sugar layer on top. but, i have shared these with many, and only compliments i have heard, and asking for what recipe i used. now, i cannot take credit for this recipe. this is by smittenkitchen, who I LOVE, by the way. They always deliver, with every single recipe i have tried. basically all their brownie recipes, and that banana bread? mwah! ah-ma-zing. mmmmmm, *mouth is watering just thinking about it*

before i give you this recipe, you can have it with frosting, which i will also put down below. but, it is definitely rich enough by itself. this frosting, lemme tell you a quick backstory. my mom's friends created a "survival guide to the kitchen" for her bridal shower. Now, in this booklet, one of these women did a MOCHA FROSTING recipe. like what?????? and surprise surprise.... its great. light and creamy and delicious. whatever. i like it on chocolate cake, which is what lex and i do.* anyway........ i just stalling now. we gonna start the recipe. in 3.......2.......1......... go. please just go.

  • 10 tablespoons (140 grams) unsalted butter

  • 1 1/4 cups (250 grams) granulated sugar

  • 3/4 cup plus 2 tablespoons (65 grams, may vary by brands) unsweetened cocoa powder (natural or Dutch-process)

  • 1/4 teaspoon salt (or a heaping 1/4 teaspoon flaky salt, as I used)

  • 1/2 teaspoon pure vanilla extract

  • 2 large eggs, cold

  • 1/2 cup (65 grams) all-purpose flour
