Breakfast at Brooke's: Crepes

Hola amigas! How are y'all doin? This week's Breakfast at Brooke's is gonna be......... crepes! I made some of these simple French treats.... err, i mean healthy breakfasts. I mean, whatever. I can't hide it, these are desserts. Like, really. But we had them as breakfast. At 8am on a Saturday morning. Oh yeah, I made them last week, but didn't have time to write a blog post, oh well. This recipe is from Lauren's Latest, who is an amazing blogger that I have been following for a while on Pinterest. This recipe popped up on my feed and I knew that I HAD TO TRY IT. And OhMyGosh, these are pretty darn awesome. Like, she said that they were better than Paris' crepes. Idk about that, but I know that they are delicious and very, very, very simple. Throw some simple, basic ingredients into a blender, refrigerate for a little bit, butter up a pan, and cook. Thats it. I used the little smoothie blender thingy that my mom uses to make Shakeology lol. It didn't all fit, so I did it in 2 separate batches. I am going to stop blabbing and saying "like", okay bye. jk, im still here. You know what? Here's the recipe. By the way, this is not the original recipe, I halved it and added vanilla. Because I wanted to.
- 2 large eggs
- 1 cup+2 tbsp of milk
- 1 cup of all purpose flour
- 1 1/2 tsp of sugar
- 2 tbsp melted butter
- pinch of salt
- 1 tsp of vanilla bean paste
- whatever fillings you want, we did fresh strawberries and some nutella
blend it all until smooth and refrigerate for 1 hour (i know, kinda long, but its worth it). I have a crepe spreader thingy, but my pan was like 1/2 a cm too small, so it only kinda worked. but anyway, butter up the pan just a little bit, flip when it looks matte and cooked on the bottom side. I just used my judgement, not really any timing. The first one turned out *kinda* gross. So I dumped it and the second one, is AMAZING. okay, thats it. i put some nutella in a piping bag (w/o a tip) and just cut the tip off. My sister sliced some strawberries and layered it all on. Fold it over, perfection. Its great. Just awesome. So that's it. Bye. Here's one picture I took on my sisters IPod. I told you, I wasn't planning on a blog post. So that's it.
